I wouldn't shift your project goals because its not centered around AI. As your project matures and finds a fit in the market you will see opportunities that can be made into AI features. Most importantly though is to build something that solves a problem. Best of luck on your journey!

95%-99% of the new “AI” companies are not going to be around in 3 years.
Unless you have a specific expertise in AI or and specific problem that requires an AI solution I would pass for now :)
2019: "We are unique because we use AI as a part of our services"
2023: "We are unique because we don't use AI/ChatGPT as a part of our services"

I'm working on a SaaS that isn't directly related to AI, but nowadays there's always a way for AI to be integrated to make your life a lot more easier and better!

What is your industry?
You can start without AI and integrate it later on.
For example, we created an educational app without AI called Tutorela, but we will use AI in the future.
It is more important that your app/website will give a lot of value to your users :)
I'm not working on an AI product either. I feel left out too haha, they all look like great concepts though.

Hah! We're just pivoting from an AI product (although it was more of a classic ML) to a non-AI one, just because it solves a bigger problem.
The cliche of "focus on the problem, not a solution" really applies hre. No one besides mediocore investors and novelty users that will churn quickly either way cares about whether you're using AI or not.
Working on Hardcover, where you can track your reading and see other people's libraries.
As long as you've got a valid problem you're solving, don't sweat it.
