I'm building a CBT journaling app (https://becomeunstuck.app) that helps people reduce anxiety and depression. In addition to the usual business metrics, we also look at how many of our users report an improvement in their mental health. In my mind, it's a measure of the positive impact the app is having in the world.
For my IOS fitness app (https://fitworkoutroutine.com/) I really like to capture analytics for trial and purchase conversion. The conversion rate helps me determine the efficiency of my paywall from user behavior - abandoning user, successful trial to paid users, and canceled trial users.
