I think the best way is the old-school eF2F meeting/call. You show that you really care about their feedback but also can navigate them if any difficulties or ask additional questions. Ideally, a way to get testimonials.

We have explicit asks like NPS and other surveys. We also like to create features in the app that give us feedback without having to ask for it. Creating some exclusivity in a beta group also identifies users who want to give you feedback because they love the product. At the end of the day, it's important for users to know the feedback actually drives product improvements.
