I've started a service which deletes your personal data from data resellers/traders which as a result stops you receiving sales or recruiter calls/emails. My criticism is that as a consumer you usually don't have any bargaining power in contracts - hence I can't do anything about bad clauses in contracts.

First, I'd find customers (LinkedIn, Reddit, forums, ...) and speak with them 1-2-1 to understand their real priorities.
