Do you know if people can see (find) an upcoming product before it has been posted ?

If you're on the free plan your page won't be promoted on the homepage, as that is a benefit reserved for Pro and Super Pro users. I have a couple of Upcoming pages on the basic plan, I shared them on social media pre-launch to get attention and gain subscribers.
