I find them stiff and unadaptable to personal use cases. I also find the UI more complicated than it needs to be

It depends on your preferences and activities that need to be managed. I'd say, GanttPRO, Wrike or Orangescrum are quite good PM solutions with an intuitive UI and advanced features.
