Has anyone used Bubble to build a complete SAAS rather than a MVP?

Sounds like something to try. Let me know if you give it a try.
PHPRunner
While this doesn't directly answer your question, many customers use our low-code solution, PHPRunner, to build fully-blown SaaS apps.
Part of my https://microsaasidea.com Newsletter, I cover Micro SaaS News every week in one of the sections.
Here are a few I covered recently.
1. shootassist .com -Business management for volume photographers
Built using Bubble and reached $1000 MRR
2. analyzify .app - Data Analytics on Shopify
Built with Bubble and reached $50K in revenue
3. Yep .so - Landing page builder.
Built with Bubble. Reached $750 MRR
4. Swapstack .co - Drive growth with newsletter sponsorships at scale
Built with Bubble. Reached $7K MRR

Nope. Not yet, but planning to do so. Let's see! It may works out.
I've wondered about this as well. I'm sure it would be possible for someone to create a SaaS using Bubble, but if it was done, I'm sure that after some time you'd want to re-build with developers to expand the business.

I'm seeing ads everywhere. I'm interested in giving it a shot but haven't done it though.
GalacticalAI
Hey Anil, just thought i'd throw us in there. Galactical is completely built on bubble! I'm a software developer and I first completely coded a application using langchain and python. It was a chatbot, I then used multiple different opensource applications to build a frontend, appsmith, tooljet, n8n and all worked but I ran into a lot of issues in one way or another eventually I decided to open my wallet lol. I didn't first try bubble, I tried Adalo and Flutterflow first and gave them a good try building full functioning apps but none I thought to be good enough. I tried bubble and never looked back, it was super easy, there is a bit of a learning curve if you don't have a technical background but everything is straight forward and outlined in the documentation. They have a free trial so why not give it a go, also their API connector is the real reason why you can scale from a MVP to a SAAS. leveraging outside sources to really power the app :) hope I helped!
Do you have similar answers now that Bubble pricing changed?
I'm mainly working on Bubble and FlutterFlow.
