Is it limitating for a launch if my app is only available in Europe ?

I understand that it's enough to add user restrictions at specific nodes, without needing to limit access to Europe only, as this offers the best user experience.

It could be limiting in terms of overall reach but its not necessarily a bad thing. Focusing on one region and that region is a well developed market like Europe can allow you to refine your product.
