I love a unimpeded trial to paid model where features get gated after the trail period runs its course.
Numbers get less inflated from a rev projection perspective and its easier to get people in the door if they don't have to put their CC in. It allows the product to do the talking while also getting all of that early user data for in app movement.

I think it depends on the type of SaaS and how finished it is. If you think it adds a decent amount of value to your users, then I say monetize it!
Imo, paying users and freemium model’s users could be fundamentally different. I would ask users to pay at least something, but pay.
It mainly comes down to responsibility and resources. If you decide to monetize an MVP, you must ensure sufficient quality assurance, at least basic customer support, etc. If you have the necessary resources — be it human, funding, or time — then why not?
